This steak rub is suttle so that it does not interfere with the taste of a great steak.
Introduction
American Barbucing's steak rub. I would like to take credit for this rub but I am sure it is already out there. On my quest to find a go-to steak rub; this rub was born.
What is The Classic steak Rub
What is the secert to a good steak rub (or steak seasoning) salt! A good steak seasoning has salt, alot of salt, in it. Normally making up roughly 40%-50% by volume of the entire mixture.
Other herbs and spices are added to enhance the flavor but the salt is what does the heavy lifting.
How To Use This Rub
Like any other dry rub it is simple to use, however, with its high salt content there is some technique necessary.
Step 1: Rub the mixture all over the meat.
The rule of thumb is that you should be using roughly 1tbsp. of rub per pound(500g) of meat.
Step 2: Once the meat has been coated, lightly cover the steak as it comes to room temperature.
What is happening? The moisture from the steak is being drawn out of the muscle fibers through a process called "Osmosis". Water will pool on the surface of the piece of meat within minutes and will mix with the rub. If placed on the grill now you will not achieve a sear, instead, it will essentially boil the steak. We want to let the steak release its moisture only to absorb it back in again which typically takes 45 minutes to one hour.
Step 3: Once this process has completed it is recommended to wash the steak thoroughly.
Why are we washing you might ask. The rub mix will also absorb the water released from the steak which will have the same boil effect. The point is that we want that steak to hit a high heat source with as little moisture as possible so we can achieve a proper sear.
Step 4: Pat dry the steak. We want a tacky-like feeling the surface of the steak.
Step 5: Add a dusting of additional rub to the surface of the steak
Step 6: Waste as little time as possible a place steak directly on high heat.
The process of using this rub is the same no matter the cut of steak you are using.

Ingredients
The Rub
- 3 tbsp Coarse Sea Salt
- 2 tbsp Ground Black Pepper
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tbsp Brown Sugar
- 1 tsp Cumin
Instructions
- Combine all ingredients together in an air tight container
- Shake to mix
Notes: This rub has a shelf life of 6 months.
